Jerk seasoning blend contains Pepper, Salt, Coriander, Paprika, Sugar, Chilli, Allspice, Cumin, Nutmeg, bay and vegetable oil. Jerk seasoning can be used with any meat (particularly pork), poultry or fish and can be added to liquid to create a marinade, or used as a rub. Jerk seasoning is very popular for barbeques and this reflects its origins as a preservative used to marinade thinly cut slices of meat before cooking, or smoking them very slowly over a wood fire, producing Jerky.
