Beetroots are edible reddish purple coloured taproots and go by different names like table beet, red beet or garden beet. These beets are rich in potassium, magnesium, iron, vitamin B6, A, C, nitrate, etc. There are many ways of preparing them. Beetroot can be eaten raw as a salad or cooked without peeling its skin to retain all the nutrients in it. Beetroot is one of the best antioxidants in vegetables.
